We are now looking for a PhD Student to join our Food Design team.
Come and be part of our team dedicated to developing food processes and conducting structural analyses of foods alternative to animal counterparts. As part of your PhD thesis work at VTT you will be focusing both wet and dry extrusion. In collaboration with our team of experts, you will also investigate the texture, mouthfeel, and visual appearance of the products, utilizing different physical and sensory methods. Your research will extend to microscopic assays to identify the distribution of proteins, carbohydrates and lipids in the products. In addition to your scientific responsibilities, you will provide support for experimental work across various internal food projects.
Your PhD work will be part of two EU-funded project GIANTLEAPS (https://giantleaps.eu/) and HEALTHFERM (https://healthferm.eu/) which focuses on extruded and/or fermented meat alternatives.
You will be supervised by a team of experts who have solid competencies in the art. The work will be carried out at VTT’s Industrial Biotechnology and Food Solutions research area in Otaniemi/Espoo, in cooperation with project partners from all over Europe. The studies linked to the PhD degree will be planned together with your supervising professor. A research visit to other research organizations is a possibility as well. Your work will advance fundamental and applied research within the food design team. In addition, it will strengthen the network between VTT’s collaboration partners and research infrastructures.
As PhD Student, you will:
- Have the possibility to fulfil your passion and ambition as a researcher
- Apply extrusion technologies from various type of raw materials including cellular agriculture.
- Collaborate with other experts to study rheological, sensory and chemical properties
- Plan and execute experimental work
- Contribute to research and development projects and to writing proposals for public funding
- Present and report your findings in conferences and scientific papers
- Complete your doctoral studies
Who we are looking for:
- You have a Master of Science or equivalent degree in food technology, chemistry, biotechnology or engineering or a related field and are eligible for PhD studies
- You have high ambition to work as an independent researcher
- You have expertise in food unit operations (such as extrusion processing, drying, separation technologies)
- Your understanding of techno-functional properties of proteins (solubility, foaming, gelation etc) and experience in basic food analytics are appreciated as bonus capabilities
- You can communicate fluently in English both verbally and in writing
